Zucchini Pasta with Red Bell Pepper Marinara


4 Small Zucchini, Spiralized / Person


Sauce:



12 Oz Organic Red Bell Pepper, Deseeded
10oz Cherry Tomatoes or Roma Tomatoes
1/2 Cup Fresh Basil Leaves


1/2 Cup Sundried Tomatoes
2 Tbsp Olive Oil

1/8 Tsp Dried Thyme
1/8 Tsp Dried Oregano
3/4 Tsp Salt
1/2 Tsp Black Pepper Powder

Blend all the ingredients in vitamin, till thick and smooth. Serve over spiralized zucchini and enjoy.


Yields: Sauce should be enough for at least 12 small spiralized zucchini pasta. (3 servings)


Garnish

1 Avocado
Raw nut-meatballs

Serve the pasta with chunks of avocado or raw nut-meatballs
