Raw Vegan Pesto Pasta

Noodle

7 Medium Zucchini, Peeled and Spiralized as Thin Noodles


Sauce


1 Cup Zucchini, Peeled and Chopped (1 Small Zucchini)
1/4 Cup Pinenuts
10 Basil Leaves
1 Strip Thyme / Oregano
10 Sage Leaves
1 Tiny Garlic Clove
1 Tbsp Lemon Juice
1 and 1/2 Tsp Salt
1 and 1/2 Tsp Black Pepper Powder
1/4 Cup Water

Place chopped zucchini in the bottom of the blender, add all other ingredients and blend all the above in Vita-Mix

Taste Note: Sauce Tasted really AWESOME and smelled really GREAT

Cheese

2 Pieces of Cauliflower (DO NOT ADD that 1 big piece, just those 2 small pieces would be enough)


Process cauliflower in food processor to make cauliflower cheese.


Toppings

Add any of your favorite toppings


1 Pint Grape / Cherry Tomatoes, Halved
1/4 Red Bell Pepper, Julienned
1/4 Red Orange Pepper, Julienned
1/4 Red Yellow Pepper, Julienned
Tiny Broccoli Pieces

Mix noodles, sauce, cheese and topping and enjoy.


Taste Note: Tastes GREAT, but it can be made awesome.

Note for Next Time:
  1. Make thin noodles, we both felt like thin noodle tasted better than this thick Noodles
  2. Add 1 Pint Grape Tomato, whenever I tasted tomato, it was really good, so adding more tomatoes should enhances the flavor.
  3. Added too much of cauliflower cheese, next time make less cauliflower cheese.
  4. While blending I added just 1 Tsp Salt and 1 Tsp Black Pepper powder and the sauce tasted awesome and was perfect. But, when we mixed sauce with the pasta, not enough salt and pepper, so we added 1/2 tsp salt and 1/2 tsp pepper, so I increased the salt and pepper in the sauce recipe to match this, hopefully that won't turn into too salty and spicy.
