Raw Vegan Pad Thai

Noodle


Daikon, Spiralized


Sauce


1 Cup Mango, Chopped (1 Mango)
1 and 1/4 Cup Zucchini, Chopped (1 Zucchini, No Need to Peel)
1/3 Cup Tomato, Chopped (1/2 Tomato)
1 Green Onion, Chopped
1 Thin Slice Ginger Piece
Juice from 1/2 Lime
1 Tsp Red Chili Flakes
1 Tsp Salt


Add zucchini at the bottom of the blender, add everything else and blend all the above using Vita-Mix until smooth.


Taste Note: Sauce tastes AWESOME

Veggies



1/4 XX-Small Purple Cabbage, Thinly Sliced
20 Strips Cilantro, Finely Chopped
1/4 Red Bell Pepper, Julienned
1/4 Orange Bell Pepper, Julienned
1/4 Yellow Bell Pepper, Julienned
1 Broccoli, Stem Bias Cut (Chopped into 45 Degree Angle)
1 Green Onion, Bias Cut (Chopped into 45 Degree Angle)


Mix sauce, noodle and veggies and enjoy the pad thai.


Taste Note: Tastes Good, but we both think, if we make the noodle out of Zucchini, this would taste AWESOME

Note for Next Time:
  1. Prepare noodle with zucchini, Daikon noodle, looked really good, like rice noodle, but noodle taste was spicy and just OK. 
  2. I didn't like the white part in the Green Onion, probably won't add the white part next time.
