Mediterranean Salad

3 Cups Curly Kale, Chiffonaded (2 Stalks )


1 Romaine Lettuce, Chiffonaded


2 Cups Cherry / Grape Tomatoes, Halved (1 Pint)
1 Cup Celery, Diced


2 Cup Cucumbers, Diced (1 Cucumber)
1 and 1/2 Cups Sweet Baby Bell Peppers, Chopped (4 Red, 4 Yellow & 4 Orange Baby Bell Peppers)


1 Cup Cauliflower, Finely Chopped
1/2 Cup Mint, Chopped
1/2 Cup Basil, Chopped


4 Heirloom Tomatoes, Diced (Add while in Season)
1/2 Cup Red Onion, Chopped
1/2 Cup Raw Olives, Chopped (20 Olives)


Mix all the veggies.

1 Tsp Cumin
1/2 Tsp Salt
Juice from 1/2 Lemon

Add all the above to the salad and mix well.


Mix Raw Hummus on top of salad.

Taste Note: Tastes AWESOME (for me) with Raw Hummus, tastes GREAT as per D.
