Stuffing
1 Cup Sunflower Seeds (Soak for 4 to 6 Hours)
1 Cup Cherry Tomatoes
1/2 Cup Celery, Chopped
1/2 Cup Red Onion, Chopped
2 Tbsp Lemon Juice
1 Tbsp Olive Oil
3/4 Tsp Salt
1/2 Tsp Paprika
1/2 Tsp Dry Basil
1/2 Tsp Dry Oregano
1/2 Tsp Garlic Powder (Replace this with 1 Tiny Garlic, next time)
1/4 Tsp Cayenne Pepper
Place the filling ingredients in food processor and process until thick and smooth.
Taste Note: Stuffing tastes AWESOME
Note: This stuffing is enough to stuff 4 bell peppers
To Serve
This can be served in 2 ways.
Spoon 1 to 2 Tbsp of the filling into each bell pepper wedges and garnish with a cilantro leaf (tastes really good with cilantro leaves)
Cut off the top, remove the seeds and fill the bell pepper with 3/4 cup of stuffing.
