Pumpkin Seed and Arugula Pesto Pasta

Noodle

6 Small Zucchini (3/Person)

Make noodle using small hole.

Pumpkin Seed and Arugula Pesto



1/2 cup raw pumpkin seeds (Soaked for 5 to 6 hours)
1 medium peeled garlic cloves, chopped
2 tablespoons fresh lemon juice
1 cup basil leaves, packed
1 cup arugula leaves, packed
2 tablespoons fresh parsley, chopped
3 Tbsp olive oil
1/8 Tsp Cayenne Pepper
3/4 Tsp Black Pepper Powder
1 teaspoons sea salt

Add all the ingredients to vitamin and blend until smooth with a bit of texture.


Use to toss with zucchini pasta.


Taste Note: Tastes AWESOME
