Rice
1 Large Cauliflower (or) 1 and 1/2 Small Cauliflower
Kohlrabi
Parsnip
Make rice out of any of your favorite veggie using food processor, I usually pulse the cauliflower for 30 seconds.
Cilantro Chutney
2 Cups Coconut (Reserve 3 Tbsp for decoration)
4 Thai Green Chilies
1 Tiny Garlic Clove
Tiny Bit Tamarind
1 and 1/4 Tsp Salt
1 Bunch Cilantro
2 Cups Water
Grind all the above in Vita-Mix until smooth.
Note: Enough to mix 7 Cups of Cauliflower Rice.
Veggies
1/4 Red Bell Pepper / Baby Bell Peppers, Finely Chopped
1/4 Yellow Bell Pepper / Baby Bell Peppers, Finely Chopped
1/4 Orange Bell Pepper / Baby Bell Peppers, Finely Chopped
2 Green Onion, Finely Chopped
3 Tbsp Coconut, Finely Chopped
Toppings
1 Tsp Chia Seeds / Serving
Assembly
Pour chutney in the bottom of the plate
Add rice in the middle
Add bell peppers, green onions and coconut around and on top of the rice
Sprinkle chia seeds or black sesame seeds on the chutney.
To Serve
Lime Wedges (MUST, it really enhanced the flavor)
Serve with Lime Wedges
Taste Note: Tastes AWESOME

Note: With 4 Thai Chilies, the dish tastes little spicy, but needed that spiciness, otherwise this dish won't taste that great.
